Prep Time: 15 minutes
Cook Time: 35 minutes
Total Time: 50 minutes

Ingredients

  • 1 Tbsp avocado oil
  • 1 medium-sized yellow onion chopped
  • 1 pound ground beef
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • ¾ tsp sea salt to taste
  • ¼ tsp black pepper to taste
  • 2 medium-sized sweet potatoes chopped
  • 5 ounces baby spinach
  • 1.5 to 2 cups grated cheese*

Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Heat the avocado oil in a large Dutch oven (or thick bottomed pot or large skillet with a deep lip) over medium high heat. Add the chopped onion and sauté, stirring occasionally until softened, about 3 to 5 minutes. Add the garlic and ground beef and use a spatula or a wooden spoon to break the meat into small chunks. Brown the meat for a couple of minutes before stirring in the chopped sweet potatoes, Italian seasoning, salt, and pepper. Cover the pot with a lid and cook, stirring occasionally, for 5-10 minutes, or until the sweet potatoes have begun to soften.
  • Add the spinach to the pot and cover it with the lid. Cook for 1 to 2 minutes, until the spinach has wilted.
  • Transfer the sweet potato and ground beef mixture to a large casserole dish and spread it into an even layer. Sprinkle the top with grated cheese.
  • Bake on the center rack of the preheated oven for 15 to 25 minutes, or until the cheese has melted and has reached your desired level of golden brown deliciousness.
  • Serve in big bowls, and enjoy! You can sprinkle chopped green onions over this delicious recipe if you'd like.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.

Notes

*I use raw cheddar cheese. You can also use mozzarella cheese, jack cheese, or cheddar cheese. Any kind of melting cheese works! To lower the calories and fat content, use 1 cup of cheese.
