Paleo Gingerbread Mug Cake

Warmly-spiced molasses mug cake made grain-free and dairy-free is a special single-serve treat for fall and winter.

Ingredients

  • 1/2 cup almond flour
  • 1 Tbsp molasses
  • 1 Tbsp pure maple syrup
  • 1/8 tsp baking soda
  • 1/4 tsp pumpkin pie spice or ground cinnamon
  • Pinch sea salt
  • 1 Tbsp melted or butter or ghee
  • 1 egg yolk

Instructions

  • Add all of the ingredients for the mug cake to a microwave-safe mug. Stir well until combined. The mixture will be very thick.
  • Microwave for 50 to 60 seconds (I do 60), or until the cake has fluffed up substantially.
  • If desired, serve with a scoop of vanilla ice cream. Enjoy!
