Fig Beet Blueberry Smoothie

Ingredients

  • 1/2 cup blueberries frozen
  • 1/4 cup beets steamed or roasted and cooled*
  • 1 or 2 ripe figs *
  • 1/3 cup pineapple
  • 1/4 cup coconut milk yogurt
  • 1/2 to 2/3 cup unsweetened almond milk
  • 1 scoop collagen peptides or beef gelatin
  • 2 Tbsp raw pumpkin seeds
  • 1/8 tsp ground cinnamon

Instructions

  • Add all ingredients to a blender and blend until smooth (Note: adjust amount of almond milk based on desired thickness). 

Notes

*For Low-FODMAP, omit beets and figs
