A colorful, flavor-infused winter roasted beet salad with all the citrus and avocado!

Ingredients
2.5ouncesbaby spinach
2.5ouncesbaby arugula
1medium beetroasted and cooled
1clementinepeeled and sectioned
1blood orangepeeled and sectioned
1avocadopeeled, cored and chopped
1/3cupshelled pistachios
1tablespoonhulled hemp hearts
For the Dressing:
1/4cupavocado oilor olive oil
3tablespoonsfresh lemon juice
1/2teaspoondried oregano
1pinchsea salt
Instructions
Add salad dressing ingredients to a small blender and blend until completely combined (note: if you don't have a small blender, whisk ingredients vigorously in a bowl).
Add salad ingredients to a large serving bowl and drizzle desired amount of dressing over the salad. Toss well until everything is coated in dressing. Serve and enjoy.
Notes
For a sweeter dressing, add 2 teaspoons of pure maple syrup or honey.
