Blueberry Oatmeal Bars

These easy blueberry oatmeal bars are made with just six wholesome ingredient and are easy to customize using different kinds of fruit. Add nuts, chocolate chips, etc., and keep them on constant rotation!

  • Preheat the oven to 350 degrees Fahrenheit and line a 8-inch baking pan with parchment paper or spray the pan with parchment paper.
  • Transfer all of the ingredients except for the blueberries to a food processor. Process until everything is well combined. No need to separate the wet ingredients and the dry ingredients! It all goes in at the same time. Note: if you don't own a food processor, mix everything together in a large bowl by hand.
  • Gently stir in the fresh blueberries using a rubber spatula or a wooden spoon.
  • Transfer the blueberry oatmeal mixture to the prepared baking dish and spread it into an even layer. Bake for 18-22 minutes, or until the bars appear to be set up and feel firm when gently poked in the middle.
  • Allow bars to cool for at least 20 minutes before slicing and serving. They will slice cleaner if they are cooled to room temperature.

Notes

*Replace the applesauce with two large ripe bananas (mashed) if you prefer bananas over apples.
**For sweeter bars, add 1 to 3 tablespoons of brown sugar, regular cane sugar, coconut sugar or maple sugar.
