THAI COCONUT CHICKEN RECIPE

This Thai Coconut Chicken features tender chunks of chicken engulfed in a rich and creamy coconut milk sauce infused with basil, fresh lime, and garlic. Serve it up with steamed rice or cauliflower rice for a complete meal!

Sauté the onions in a large pot until softened, about 5 minutes.

Add in the chopped chicken, garlic and ginger. Cook, stirring occasionally, until the chicken has browned.

Pour in the coconut milk, fish sauce, lime zest and lime juice. Bring mixture to a full boil and cook for 10 minutes. Taste for flavor, and add sea salt to taste.

Stir in the baby spinach and basil and continue cooking until the spinach has wilted. Serve over rice or cauliflower rice.
