Sprinkle salmon with sea salt and pepper then sear in a hot skillet for 4-6 minutes per side. Transfer salmon to a plate and set aside.

Sauté garlic in the skillet until fragrant, about 2-3 minutes.

Add the rest of the ingredients for the sun-dried tomato sauce to the skillet. Bring to a full boil and cook until sauce is thick, about 8 minutes.

If desired, stir in baby spinach and/or fresh basil.

Transfer salmon back to the skillet with the sauce and heat until piping hot. Serve with side dishes such as rice and roasted vegetables and enjoy!
