Sauté the onion, garlic, and bell pepper in a large skillet until softened, about 5 minutes.

Add in the chopped Italian sausage links and spinach and continue cooking until all of the liquid has evaporated, about 5-8 minutes.

Fill the muffin cups of a muffin tray up 2/3 of the way with the sausage mixture.
