Cut the tip and tail off of the butternut squash, then slice it in half using a sharp knife.

Use a sturdy spoon to scoop out the seeds and innards from both squash halves.

Drizzle both halves with oil, then sprinkle with sea salt.

Roast squash cut-side down on a baking sheet at 400 degrees F for 40-60 minutes, until fork tender. Drizzle with maple syrup and sprinkle with cinnamon.
