In a stand mixer, cream together the butter and sugar. Add the egg and the vanilla extract and beat well.

Add in the dry mixture and mix. Form a disc out of the dough, wrap in plastic wrap, and refrigerate for at least 2 hours.

Roll out the dough and use cookie cutters to cut out cookies. Bake at 350.

Decorate cookies using store-bought or homemade icing.
