Pat the cod filets dry with paper towels, then sprinkle both sides with salt, pepper, and garlic powder.

Sear both sides of the filets for 2-3 minutes, until golden-brown. Transfer to a plate and set aside.

Prepare the sun-dried tomato sauce. Sauté the onion, add the remaining ingredients, and boil until thickened.

Transfer the cod filets back to the skillet with the sauce and continue cooking at a boil until the cod is cooked through (reaches an internal temp of 145 degrees F).
