Soak the rice for at least 15 minutes, then drain the water. Add all of the ingredients for the coconut lime rice to a medium-sized saucepan.

Cover and bring the pot to a full boil. Immediately reduce the heat to low and cook until the rice has absorbed the liquid, about 12-15 minutes.

Remove the lid and fluff the rice with a fork.
