Mix all of the wet ingredients together in a large mixing bowl, then add in the dry ingredients and mix well.

Transfer the dried cranberries and orange zest to the mixing bowl and stir until well-distributed throughout the dough.

Scoop mounds of dough onto a parchment-lined baking sheet. The dough is softer than regular cookie dough, and this is normal.

Bake at 350 degrees F for 9-11 minutes. Allow the cookies to cool completely before eating.
