Caramelize the onion in a large pot or Dutch oven. Once the onion has finished caramelizing, transfer it to a bowl and place the Dutch oven back on the stove top.

Sprinkle the chicken thighs with salt and pepper.

Brown the thighs in the pot until crispy.

Transfer the caramelized onion to the pot with the chicken and pour in the balsamic vinegar, coconut milk, and honey.
