ALMOND FLOUR BLUEBERRY CRUMB BARS

Almond Flour Blueberry Crumb Bars made grain-free, refined sugar-free and dairy-free using almond flour, fresh blueberries, coconut oil and pure maple syrup. Made with just 5 simple ingredients, these healthy blueberry bars are a  lovely healthy dessert recipe for berry season.

- almond flour - blueberries - pure maple syrup - coconut oil or butter - tapioca flour - sea salt

Add the crumble mixture to a mixing bowl and stir well until combined. Measure out 3/4 of the mixture and set it aside to use as topping.

Pour the crust mixture into a parchment lined square pan. Press it into an even layer, then poke many times with a fork. Bake at 350 for 10-12 minutes.

While the crust is baking, heat the ingredients for the blueberry filling in a saucepan. Bring to a full but controlled boil and cook for a few minutes, until thick.

Pour blueberry mixture into the pan with the pre-baked crust. Sprinkle with crumble topping. Bake 20-25 minutes. Slice and serve!
