Add the peanut butter, butter (or coconut oil), pure maple syrup to a saucepan and heat on low heat until the wet ingredients are well-combined.

Remove the saucepan from the heat and add in the oats and sea salt (and pure vanilla extract if adding).

Stir everything together until a thick sticky dough forms.

Drop mounds of dough on a parchment-lined baking sheet, making any size cookies you like.

Freeze for 15 minutes or refrigerate for 1-2 hours, or until the cookies have set up. Enjoy!
