During these crazy times it seems like we’re all just hunkered down..working, playing away from the crowds when possible…just trying to work on our inner souls. At least that’s the boat I’m in ๐Ÿ˜‰

There are wildfires all over California currently, and we’re pretty well swaddled in smoke. Send your warm wishes to our firefighters if you have some to spare!

Food this week! WELL, we have a great lineup for you all! On the menu: Guacamole Tostadas, Teriyaki Vegetable Stir Fry, Pasta Alla Norma, Chickpea Salad Sandwich, Southwest White Bean Veggie Burgers, and Summer Grain Bowls. For dessert? My amazing gluten-free chocolate cake I posted recently!

SUNDAY

GUACAMOLE TOSTADAS WITH BLACK BEAN TORTILLAS from She Likes Food

Prep Ahead Tip: Recipe comes together very quickly

Vegan/Gluten Free Substitutions: Omit cheese to make vegan and use a gluten free self rising flour to make gluten free.

Animal Lover’s Rendition: Add some chopped bacon, grilled or baked chicken, or sauteed shrimp!

 

MONDAY

TERIYAKI VEGETABLE STIR FRY WITH PINEAPPLE from Rhubarbarians

Prep Ahead Tip: Recipe can be made up to 4 days ahead and is great for meal prep!

Vegan/Gluten Free Substitutions: Recipe is vegan. Be sure to use gluten free cornstarch for gluten free and switch out the soy sauce for tamari

Animal Lover’s Rendition: Add 1 to 2 large chicken breasts, or serve with baked salmon or sauteed shrimp.

 

TUESDAY

PASTA ALLA NORMA from I Heart Vegetables

Prep Ahead Tip: You can make the sauce up to 2 days in advance then add the pasta when ready to serve.

Vegan/Gluten Free Substitutions: Use gluten free pasta and/or skip the Ricotta salata

Animal Lover’s Rendition: Serve alongside Baked Chicken (check out my Basil Baked Chicken!), salmon, or steak.

 

WEDNESDAY

CHICKPEA SALAD SANDWICH from Hummusapien

Prep Ahead Tip: Salad is best the day of since the avocado will brown.

Vegan/Gluten Free Substitutions: Recipe is vegan, use GF bread for GF.

Animal Lover’s Rendition: Add a few slices of deli turkey, and/or turn it into Curried Chicken Salad.

 

THURSDAY

SOUTHWEST WHITE BEAN VEGGIE BURGERS From The Roasted Root

Prep Ahead Tip:Cook the rice up to 5 days ahead of time. Veggie burgers can be made and frozen.

Vegan/Gluten Free Substitutions: Replace the egg with one flax egg to make vegan. Recipe is gluten-free

Animal Lover’s Rendition: Skip the beans and go right for the Asian Turkey Burgers with Zucchini Noodles!

 

FRIDAY

SUMMER GRAIN BOWLS from Joanne Eats Well

Prep Ahead Tip: Cook the grains up to 5 days ahead of time.

Vegan/Gluten Free Substitutions: Recipe is already vegan. Replace the farro with quinoa or rice to make it gluten free.

Animal Lover’s Rendition: Add ground beef or turkey, or rotisserie chicken.
