You didn’t think I had it in me, did ya?

It’s true: your eyes do not deceive you. I made pasta. Of the lasagna varietal.ย There are some things spaghetti squash can’t fix, and that’s a lasagna craving.

Prior to making these lasagna roll-ups, I wasn’t sure what the biggity big deal was with them. I had seen and ignored roll-up recipes. In my head, I stewed: “why would you roll it up if you can just make a regular freaking lasagna? Roll-ups make me kinda mad. I’m gonna go make roll-ups.”

As I began handling the limp…err…wet noodles, smearing them with portabella and spinach cheesy filling, rolling them, saucing them, and sprinkling them, I was overcome with a sense of calm. Rolling up lasagna is therapeutic. Why had I never rolled lasagna before?

  2. Ha! I agree, probably the best excuse to make a roll-up is for a cleaner presentation. I feel like for just myself, I’d prefer traditional lasagna, but when guests are in the picture, as you show these turn sloppy lasagna into something truly beautiful.

  3. You are right, SOMETIMES spag squash does not cut the jam.
    Whatever that means.
    I made pasta the other day too and the hubs was like “is this secretly made of cauliflower or squash?” He was very suspicious.
    I am LOVING these rollups lady…so classy. I am totally a food-dropper too.
    I have been through manyyyyyyy white towels. I gave up shooting on them for that reason.

  9. Sometimes what we consider a mundane task can be quite calming the brain. Say, for instance, unwrapping a hundred Rolos for V-day candy. I hemmed and hauled, but it was too bad. You are a gal after my heart. I adore pasta, and I especially adore ‘shrooms and spinach together. Love this like crazy. Pinned!
