Peanut Butter: Pick your favorite kind of peanut butter and go to town! I use regular creamy peanut butter rather than natural peanut butter because I like that it has a little bit of added sugar.
For me, the sugar in the peanut butter and the pure maple syrup equates to just the right amount of sweetness.
If you use an unsweetened peanut butter, be sure to add the chocolate chips or the cake wonโt be very sweet.
While alternative nut and seed butters like almond butter and sunflower butter will work, be sure you enjoy the flavor of whatever you use because you will be able to taste it.
Gluten-Free All-Purpose Flour: The base of the recipe, we need a gluten-free all-purpose flour blend. As always, I use Bobโs Red Mill Gluten-Free 1-to-1 Baking Flour.
Any GF blend that contains starches like rice flour and potato starch should work as long as they are designed to be a 1:1 replacement for regular all-purpose flour.
If you arenโt gluten-free, you can use regular all-purpose flour although I havenโt tested it myself. You may need to add a little extra all-purpose flour because GF flours tend to be slightly more absorbent than regular wheat flour.
Pure Maple Syrup: The sweetener here! Pure maple syrup is my preference over cane sugar because I try to keep food as unrefined as possible.
That said, you can use 1 tablespoon of brown sugar or white sugar instead of pure maple syrup and add an extra tablespoon of milk.
Milk of Choice: Select your favorite dairy or nondairy milk. I use unsweetened oat milk. Almond milk, soy milk, cashew milk, coconut milk, and cowโs milk all work.ย
Baking Powder: The leavening agent here, we need a small amount of baking powder to help the cake rise. Note that if you skip this ingredient, the cake wonโt rise as much.
Gluten-free all-purpose flour blends do contain leavening agents but we still need to add a little more.
Sea Salt: A pinch of sea salt brings out the peanut butter flavor even more and also makes the cake taste sweeter without the need for extra sugar. Be sure you donโt skip the little shake of salt!

- Replace 1 tablespoon of the milk with one tablespoon of melted butter for a luscious buttery flavor.
- For a chocolate peanut butter mug cake, you can add 2 teaspoons of cocoa powder and an extra tablespoon of milk.

There is no need to separate the wet ingredients from the dry ingredients as everything should mix together very easily. If youโd like, sprinkle extra chocolate chips on top of the cake batter.
Microwave for 60 to 75 seconds (on the regular high setting), or until the center of the cake has set up. I recommend starting with 60 seconds, then adding 8-15 seconds if the cake looks like it still needs more time.
The exact cooking time depends on the strength of your microwave; however, most microwaves will perform excellently under this 60-75 second timeframe.
An easy way of telling whether or not a treat is fully cooked is to take the internal temperature. Simply insert a digital thermometer into the center of the cake. If the cake reads 190 degrees Fahrenheit or higher, it is fully cooked.
