Superfood crunchy kale and blueberry salad with raspberries, radishes, cabbage, carrots, and vegan buttermilk salad dressing. A great salad option for summer barbecues and picnics!

Kale and Blueberry Salad with Vegan Buttermilk Dressing - the perfect healthy option for bringing to picnics and barbecues!

When itโ€™s too hot to think… when you need a break from less-than-stellar food (and/or alcohol) decisions… when youโ€™re in the mood for something cold, crunchy, and green…THIS!

Thereโ€™s something about a simple, seasonal, goody-packed salad that really sings to my heartstrings.

While Iโ€™m all about those filling, comforting meals, sometimes thereโ€™s nothing more satisfying than a light and cleansing lunch or dinner… which is where this vibrant beauty comes into play.

Kale and Blueberry Salad with Vegan Buttermilk Dressing - the perfect healthy option for bringing to picnics and barbecues!

I was telling you about this salad yesterday in my Vegan Buttermilk Salad Dressing post.

I really canโ€™t take credit for this particular recipe, as it comes straight out of Southern Livingโ€™s Kale & Blueberry Slaw with Buttermilk Dressing recipe.

They call it a slaw…I call it a salad. We cool with that? We cool.

My favorite part about this recipe, other than the fact that itโ€™s jam packed with nutritious crunchy, poppy, juicy goodies, is it saves super well!

You can make it ahead of time and enjoy it at a picnic/BBQ, or make it in bulk for work lunches.

Simply put everything in a huge bowl and toss in your desired amount of Vegan Buttermilk Salad Dressing. I didnโ€™t use all of the dressing for this recipe, so youโ€™ll likely end up with some leftover, which you can put toward other salad endeavors.

    1. Hi Joan! I totally understand the frustration. Ads are how we bloggers are able to develop content that is free to you. I provide a “jump to recipe” button at the top of every post, which allows you to go straight to the recipe, cutting out all the ads. If ads are bothering you on other sites as well, you may consider using an ad blocker and then they won’t come up on any site at all. Hope this helps!! xoxo
