Besides this Indian Chickpea Stew being incredibly worthy of sharing with the universe, I have a fun tidbit of information for you!  I am contributing to Food Fanatic, which is a woooonderful site that incorporates recipes from bloggers. Each blogger has a specialty they share on the site, and my specialty is vegetarian.

Make no mistake, I eat the meat. On the reg. But I do prepare a grand ol’ amount of vegetarian dishes each and every week. I take them to work, have them as side dishes and simply enjoy having veggie recipe leftovers as healthful meals or snacks.

This Indian Chickpea Stew is packed with spinach, tomatoes and is great served alone or over brown rice.
