Prep Ahead Tip: Greens can be washed and chopped up to 4 days in advance. Store in a sealed container with a paper towel or cotton towel to absorb moisture.

Prep Ahead Tip: The whole recipe can be made up to 5 days in advance, and Basmati rice can be cooked up to 4 days in advance.

Vegan/Gluten-free Substitutions: Recipe is gluten-free and can be made vegan by adding your favorite vegan “cheese,” or omit the cheese and add chickpeas or your favorite veggies.

Indian Roasted Chickpea and Sweet Potato Curry from Eats Well With Others

Prep Ahead Tip: This recipe does take some time in the oven but most of it is hands off. It stores really well, so you can make it ahead of time over the weekend and reheat when ready to eat.
