Happy Labor Day Weekend!
I can’t believe summer is coming to a close!
I’ve resolved to soak up the warm sunny weather as much as possible before we head into the cooler fall months, so I’m up in Tahoe again this weekend hitting the trails and the lake.
On the menu this week: Healthy Zucchini Corn Fritters,ย Crunchy Asian Tofu Wraps,ย Roasted Stuffed Peppers with Chickpeas, Goat Cheese, and Herbs,ย Israeli Power Salad, and Vegan Corn Chowder!
Enjoy the long weekend! xo
