Prep Ahead Tip: The lentils and dressing can be prepared up to 2 days in advance.

Wednesday
Greek Super Grains Salad with Homemade Pita Chips from Eats Well With Others
Prep Ahead Tip: This recipe is super quick to come together, but if you’re pressed for time the grains can be cooked ahead of time.
Vegan/Gluten-free Substitutions: To make this recipe vegan, omit the feta cheese or sub crumbled tofu with lemon juice. Use gluten free pita to make it gluten free, or just omit the homemade pita chips entirely.

Wasabi Vegetable Bowls from The Roasted Root
