Quick and easy 30-Minute Ground Beef and Sweet Potato Skillet with Brussel Sprouts is a simple, nutritious dinner recipe that is paleo, whole30 and delicious! Serve it as is or with additional side dishes for a satiating meal.
This is one of those pre-fall meals to get you in the mood for whatโs ahead. It incorporates fall and winter produce (sweet potatoes and brussel sprouts) to get you all fired up for cinnamon and nutmeg.
Letโs face it, meals like this are our gateway to pumpkin season.
Unpretentious, uncomplicated, straightforward and undoubtedly nourishing is the name of the game here.
If you love beef, sweet potatoes, or brussels sprouts, you will most assuredly be attracted to this meal. Itโs a flavor fest, boasts health benefits, and is equal parts filling yet light.
Hereโs what we need to make this tasty meal happen.
Ingredients for Ground Beef and Sweet Potato Skillet with Brussel Sprouts:
Well, you pretty much already nailed half the ingredients just by reading the title. Ground beef, sweet potato, brussels sprouts, red onion, garlic powder, oregano, and sea salt. Thatโs it!
I typically use either 80/20 or 85/15 grass-fed ground beef because it is SO flavorful! I recommend using a fattier grass-fed ground beef for the most flavorful, best results.
This simple combination gives you plenty of protein, fiber, complex carbohydrate, vitamins and minerals, and itโs nice and satisfying.
Letโs make it now that weโre experts!
What I love about this recipe, aside from its tastiness and health benefits, is I throw every last ingredient into the skillet at the same time, and cook.
So essentially, it takes zero brain power to make this recipe!
How to Make Ground Beef and Sweet Potato Skillet with Brussel Sprouts:
Add all of the ingredients to a large skillet and heat to medium-high. Place the ground beef in the center of the skillet to allow it to brown for 2 minutes before flipping it to the other side and browning another 2 minutes.
Chop up the beef using a spatula, then stir it into the vegetables.
Turn the heat down to medium, cover the skillet and cook for 10 to 15 minutes, stirring occasionally, or until the vegetables have reached your preferred level of done-ness.
Taste for flavor and add sea salt to taste.
How to Serve This Meal:
Your serving options for this meal are endless! You can eat it as is (this is the sort of meal I eat for lunch), serve it up with steamed brown or white rice (I do this for dinner, which is when I eat the majority of my carbs), cauliflower rice, and/or more sautรฉed or roasted veggies.
If you do dairy, feel free to grate some parmesan, cheddar, or mozzarella cheese over everything while itโs still steamy hot. Gouda cheese would be goooodah too!

Can you substitute ground turkey instead of the beef?
Hi Kim! Absolutely! The dish won’t have as much flavor (because: less fat), but it will still taste nice and fresh ๐ Hope you enjoy!
I loved this recipe! Quick and easy. My husband didnโt care for the beef/sweet potato combo though. Next time I think Iโll try red potatoes.
I’m happy you enjoy it, Kimmy! Also love the idea of swapping out the sweet potatoes for red potatoes – sounds glorious!
This was really bland. Needs more seasoning.
Hi Carol! You could try adding more salt, garlic, garlic powder, or soy sauce (or coconut aminos/liquid aminos). ๐
This recipe is a keeper! My husband nor I could believe how fast dinner was on the table, on a night when we needed something fast and easy. I added chopped bacon and it gave a nice additional layer to the flavor. I am inspired to make more of these skillet meals- healthy and fast! Thank you!!
My pleasure, Heather! Thanks so much for the sweet note. I’m happy you and your husband like the recipe, and I love the idea of adding bacon! xoxo
