Creamy chicken with spinach artichoke sauce is a quick and easy weeknight meal with restaurant-quality flavor and flair! All you need is eight ingredients and a skillet!
Any fans of spinach artichoke dip in the house?!
Do you love it so much you could make a meal of it?
Great news! You can…right here, right now, AND itโs phenomenal for you.
Okay, okay, it isn’t exactly spinach artichoke dip; however, it may just give you an equivalent neurogasmic high you’d receive with the actual dip…it’s JUST that good!
This Creamy Chicken with Spinach Artichoke Sauce comes from Ronny Joseph Lvovskiโs new cookbook, The Primal Gourmet Cookbook.
This cookbook is Whole30 endorsed, with a foreward by Melissa Urban (the co-creator of Whole30), so you know itโs legit. It includes everything you need for a nourishing diet – a lot of variety and quality fresh ingredients with tons of flavor.
Iโve been following Ronny for years – he fashions up the most flavorful clean dinner recipes that are paleo, and/or whole30 and shares them on his blog, Primal Gourmet.
Ronny started eating a cleaner whole food diet over ten years ago as a way to improve his health. He was overweight and was in a cycle of gaining and losing, which was remedied by making the decision to just stick to real (primal) foods.
For those seeking to maintain a health-conscious lifestyle or to make changes (either small or massive), Ronny is an excellent person to follow.
His real approach to food eliminates that daunting feeling of constant dieting. His approach is simply a wholesome lifestyle. This subtle mindset shift makes consistency so much easier as opposed to the off-and-on dieting that can often feel boring or tortuous.
Ronnyโs cookbook follows this mentality – the book cover says it – itโs not a diet if itโs delicious. Everything in the cookbook looks so fresh and nourishing – these filling meals will keep you feeling energetic and are absolutely mouth-watering!

Now, let us discuss this chicken recipe!
Itโs so quick and easy to prepare and requires only one skillet. I made a few changes to the ingredients just out of personal preference, but the recipe is incredibly well-made.
Hereโs how we make it!
How to Make Creamy Chicken with Spinach Artichoke Sauce:
Slice the chicken in half to make a thinner cutlet. This helps ensure the chicken cooks evenly and stays tender. As an alternative, you can purchase chicken tenders or thin chicken fillets that are already thinner cuts.
In a large skillet, head the avocado oil over medium-high heat. Add the chicken and cook until golden-brown on both sides and cooked through, about 4 to 5 minutes per side. Transfer the chicken to a plate and set aside.
Add the garlic to the skillet and cook, stirring continuously, for 30 seconds. Add the stock and cook, scraping up any browned bits from the bottom of the pan with your spoon, for 1 to 2 minutes. Add the coconut milk, ยผ teaspoon of sea salt, and ยผ teaspoon of black pepper and cook until the sauce has reduced by half, about 3 to 4 minutes. Stir in the mustard.
Add the spinach and artichokes and cook until the spinach has wilted, about 2 minutes. Taste and season with salt and pepper as desired. Return the chicken to the pan and serve immediately.
If you eat rice, you can serve the chicken with steamed white or brown rice. You can also serve with your choice of gluten-free or grain-free pasta. Keep it simple with a side of roasted vegetables or a salad.
