Cheesy mashed sweet potato casserole?! What is happening here??

Casseroles with sweet potatoes are typically sweet with added sugar of some kind and a delicious crumbly sweet topping, as seen in my classic Healthy Sweet Potato Casserole recipe.

Weโ€™re going against the grain here and are making a classic mashed potato casserole, but using sweet potatoes instead. 

I know, bold.

But here me out here, because this show-stopping side dish is incredibly flavorful, and in my opinion, way better than mashed russet potato casserole!

I actually prefer sweet potatoes over russet potatoes in this casserole because sweet potatoes are naturally softer and moister than russet potatoes, which need a lot of liquid (typically milk or cream) to become creamy.

For this reason, the texture turns out so pleasant and the dish has an overall palate-pleasing richness that just checks all the boxes.

Plus, sweet potatoes are loaded with Vitamin A, Potassium, antioxidants, fiber, and complex carbohydrates, making them a nourishing food for your body.

Does This Casserole Taste Sweet?:

This casserole is deliciously savory! While there is a very subtle hint of sweetness, the combination of butter, sea salt, yogurt, garlic powder, and cheese make this a savory dish. 

Prior to making this recipe, I assumed (incorrectly) it would taste like a Thanksgiving sweet potato casserole (so, sweet) with cheese. So I essentially, I imagined it to be pretty weird. But it truly tastes savory through and through.

Think of this like twice baked potatoes…but in the form of a casserole.

If you want to take it a step further, you can always add caramelized onions and fresh garlic for an over-the-top flavor blasted treat.

Ingredients for Mashed Sweet Potato Casserole:

Sweet Potatoes

Butter

Greek yogurt

Garlic Powder & Sea Salt

Colby Jack Cheese

Bacon 

Green Onion

If youโ€™d like to replace the Greek yogurt with sour cream, you absolutely can! 

Want to make this casserole with russet potatoes or Yukon gold potatoes? Go for it! Simply add ยฝ to ยพ cup of milk, cream or canned coconut milk when mashing the potatoes, as they will need the added creaminess and liquid.

Cheesy Mashed Sweet Potato Casserole with Bacon and Green Onion - a delicious savory casserole recipe that serves as an amazing side dish.

How to Make Cheesy Mashed Sweet Potato Casserole:

Heat a pot of water on the stovetop and bring to a full boil. Add the peeled and chopped potatoes and cook for 10 to 15 minutes, or until the potatoes are very soft when poked with a fork.

Drain the potatoes into a colander and transfer them back to the pot you used to boil them.

Boil the sweet potatoes until tender, then drain them into a colander.

Add the butter, Greek yogurt, garlic powder, and sea salt and mash until everything is creamy and well-combined. Taste this mixture for flavor and add more sea salt to taste.

Preheat the oven to 375 degrees Fahrenheit.

Transfer the mashed sweet potatoes to a 13โ€ x 9โ€ casserole dish and spread into an even layer.

Top with grated cheese and bake on the center rack of the preheated oven for 20 to 25 minutes, or until the cheese is melted.

While the casserole is baking, cook the bacon over medium-high heat, stirring occasionally until it reaches your desired level of crisp. 

Once the casserole is out of the oven, sprinkle the cooked bacon over the top along with the chopped green onion.

Ingredients

  • 2.5 lbs sweet potatoes chopped into small chunks (2 large sweet potatoes)
  • 8 Tbsp unsalted butter melted
  • 6 ounces Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 4 to 8 ounces Colby Jack Cheese grated*
  • 6 strips thick cut bacon chopped
  • 4 stalks green onion chopped

Instructions
