Let’s discuss the healthy ingredients in this energy boost smoothie! Each ingredient serves an important role.

Beet Smoothie Ingredients:

Cooked Beets: Either buy pre-cooked beets from the store, or cook beets using your preferred method. I use Love Beets cooked beets in this beet smoothie recipe. This saves a great deal of time, as beets take a long time to cook.

If you are roasting your own raw beets, be sure to use three 3 small-medium beets, which is roughly 6 ounces. Using three large beets will not a delicious smoothie make. I use red beets, but any color of beets, including golden beets, will work.

Frozen Blueberries: A generous amount of blueberries goes into this easy smoothie recipe. While you can use fresh blueberries, I prefer using frozen blueberries because the end result is a cold smoothie with lovely texture.

While you can use fresh beets, I prefer the texture of cooked beets in smoothies because the texture turns out nice and creamy. The cooking process also helps remove some of the earthy flavor as well.

Light Canned Coconut Milk: The ingredient that brings creamy flavor and silky texture, making us feel like we’re drinking something exotic. It also adds healthy fats to the smoothie, with aids in the absorption of all of the Vitamins.

For the best results, use light canned coconut milk or full-fat canned coconut milk as opposed to coconut milk from a carton.

Unfiltered Apple Cider: An all-star ingredient that adds sweetness and lovely apple flavor to make the flavor of this beet smoothie shine. It helps hide the beet flavor and really enhances the experience. Apple juice works too.

Chia Seeds: Adding omega-3 fatty acids to the smoothie, chia seeds are a superfood. Chia seeds do thicken as they sit so be sure to drink the smoothie right away. The smoothie will become thicker the longer it sits.

Ground Cinnamon: A pinch of ground cinnamon completes our apple pie flavor, making us feel like we’re enjoying some sort of apple pie milkshake! Don’t skip it unless you aren’t into cinnamon. Cinnamon helps reduce blood sugar, which is ideal for higher sugar smoothies like this.

Recipe Customizations:

  • Substitute beet juice, almond milk, orange juice, pomegranate juice, or cranberry juice for the apple cider. It will change the flavor, but this antioxidant beet smoothie will still taste great!
  • If you’re using fresh blueberries, add some ice cubes to the blender.
  • โ€‹Add your favorite fresh fruit or frozen fruit such as strawberries, mixed berries, pineapple, or mango.
  • Toss in 1 tablespoon of hemp seeds, flax seeds, or nut butters for added health benefits.
  • โ€‹Add the beet greens to this smoothie if you had a bunch of fresh beets with the greens attached.
  • Toss in a frozen banana if you enjoy the flavor of banana in smoothies.
  • If you’re into tropical flavors, substitute the berries for mango and use orange juice instead of apple cider.
  • Use this recipe for smoothie bowls and top your smoothie bowl with granola, cacao nibs, and fresh fruit for a healthy breakfast.
  • Add your favorite protein powder to make this a meal replacement smoothie.

Now that we have discussed the simple ingredients, let’s make this beetroot smoothie recipe!

How to Make a Beet Smoothie:

Cook the beets according to your preferred method. Be sure to perform this task well in advance so that you can refrigerate the beets after cooking them until they are completely chilled. You can also do as I do and buy cooked beets from the produce section of the grocery store.

Add all of the ingredients for the beet smoothie to a high powered blender. Secure the lid and blend until all of the ingredients are combined and a creamy texture results. Taste the smoothie for flavor.

Blender with blended smoothie inside.

If you’d like for it to taste sweeter, add a little maple syrup or some pitted medjool dates. You can also add more cinnamon. I find this smoothie has a great deal of natural sweetness, so I love it as is.

โ€‹Pour smoothie into a large glass, and enjoy! You can get fancy by garnishing the top with extra chia seeds and chopped pistachios if you’d like.

Because I like to geek out on food as medicine, I’m here to tell you about all of the incredible health properties this smoothie encompasses.

Nutritional Benefits of This Smoothie:

  1. Detoxifying: Blueberries and beets are full of antioxidants, which help cleanse your system of damaged (oxidized) cells. They are also full of nutrients, which help replenish your Vitamin tank. Beets are full of manganese, potassium, copper, Vitamin C, Vitamin B6, and blueberries are packed with Vitamin K, manganese, and Vitamin C.
  2. Boosts Metabolism: Blueberries, beets and coconut products all jump start your metabolism and help burn fat for fuel.
  3. Energy Boosting: The carbohydrates in beets are incredible fuel for enhancing athletic performance. In fact, beet juice has been touted as a miracle elixir because it increases blood oxygenation, which is an incredible tool for athletes. As opposed to spiking your energy level and dropping it like it’s hot, the natural sugars in the beets and berries come with fiber. Fiber provides substance for processing, ensuring the fructose doesn’t hit your blood stream too quickly.
  4. Supports Healthy Digestion: Dietary fiber. This smoothie is full of fiber, which is essential to regulating your digestive system. Coconut is also more hydrating than water because it contains electrolytes, so this smoothie is also very hydrating. It is important to stay hydrated for efficient digestion.
  5. Great for your Brain and Memory: Blueberries (a.k.a brain berries) are touted as one of the best “brain foods.” They decrease oxidative stress on your brain and improve your capacity to learn and retain information. So drink this smoothie and then take the Bar exam.

  3. Just discovered the loveliness of coconut oil and milk – now I’m adding it absolutely everythang. <3

  4. I think I’m in love! No, it has never occurred to me to add apple cider to a smoothie. Why? I’m not quite sure. This is why you’re the genius. Love this!

  5. You’re the beet queen! Have I already told you that? I need to try beets in a smoothie ASAP. I mean, clearly. Gorgeous photos!!

  6. It IS a pretty princess! So I had to look up what beets look like (I hate veggies and gag down the same ones all the time ;)) and don’t recall ever seeing them but my husband says he knows where to get them! I looked at the recipe and was wondering if you could tell me about how much 1 beet weighs or the width or something like that. I’ve noticed that American produce is monstrous compared to German so I’m always left guessing. Does 2″ / 82 grams sound about right? I know it’s just a smoothie but my baker-nature hates guessing. ๐Ÿ˜‰ Thank you!

  7. An appcicle?! Oh man. If this smoothie tastes as half as good as it looks then I’m definitely in for a treat. It’s gorgeous!!

  8. Yesssssss! Julia this is such an awesome smoothie! I love that you cooked the beets too. I’ve always used raw which definitely leaves a “beet-y” taste to the smoothie so I’m definitely cooking them next time. Agreed, apple juice/cider is one of the best additions to a smoothie!

    1. Yeeeeeeeah, so glad you like it, Christina! I also like the texture of cooked beets better in smoothies cause it comes out smoother. Lemme know if you try out the smoothie!!

  9. Hah, I almost did a double take because you and Liz posted beet + berry smoothie recipes today! Great minds! I’ve never added beets to a smoothie before, and I’m so intrigued by the color. Bring on the red/magenta/maroon smoothie revolution?

    1. Yeeeeeah! Liz’s looks amazing! I’ll have to try hers out too. Gotta love pretty pink smoothies ๐Ÿ˜‰

  10. Twins! Love you!! And pre-cooked beets are like the best thing ever. I buy ’em all the time now because you know I’m a lazy-butt. XO

    1. Seriously, the pre-cooked beets are awesome for throwing in salads or adding to veggie sautes – it really makes beets so much more appealing when you don’t have to cook them fooooorever and ever!

  11. THESE PHOTOS. SO PURDY!
And a smoothie with beets? I can’t lie, I haven’t tried it. But all those magical ingredients are doing weird things to my noggin and I needs it RIGHT NOW.
    Pinned!
