Strips of tender beef and al dente vegetables mingle with perfectly cooked rice noodles in an amazing sauce that is all things sweet, savory, and tangy.

Not only does it knock all the authentic flavors and textures out of the park, but this easy dinner recipe is ready in 30 minutes or less. 

Thatโ€™s quicker than ordering and picking up takeout!

Similar to Pad See Ew and Pad Kee Mao (Thai stir fry noodles), all of the sauce gets absorbed into the noodles.

Letโ€™s discuss the basic ingredients for this beef and noodles recipe. As always, there are plenty of options to customize the recipe, so donโ€™t worry if you donโ€™t recognize an ingredient.

Ingredients for Beef and Noodles:

Steak: Pick your favorite kind of steak for this beef tips and noodles recipe! I usually go with boneless ribeye, New York strip steak, or top sirloin steak. Chuck roast and beef stew meat work too! These options result in tender steak with beefy flavor.

Rice Noodles: Tender rice noodles soak up the rich sauce, resulting in an easy dish with so much flavor! I use gluten-free rice noodles found in the same aisle of the grocery store as the soy sauce. Egg noodles work too if you prefer them!

Some rice noodles come in 16 ounce packages. If that is the case for you, you can either use half of the noodles or double the recipe.

Red Bell Pepper: Bell peppers bring a slight smoky flavor and some natural sweetness to a meal.

Yellow Onion: Bringing a big boost of bold flavor, onions enhance everything they touch! Increase or decrease the amount according to your personal taste.

Green Onions: Chopped green onions (or scallions) add a soft onion flavor to this Asian-inspired noodle recipe.

Stir Fry Sauce Ingredients:

The easy sauce is composed of coconut aminos, rice vinegar, chicken broth, fresh garlic, fresh ginger, toasted sesame oil, sriracha, and tapioca flour.

Don’t let the long list of ingredients fool you! The majority of them belong to the sauce, and you likely already have them on hand if you’re accustomed to cooking Chinese food at home.

In case you arenโ€™t familiar, coconut aminos are a good soy-free replacement for soy sauce, as they provide umami flavor with some natural sweetness. 

Recipe Customizations:

  • Replace the coconut aminos with โ…“ cup of low-sodium soy sauce and 3 tablespoons of pure maple syrup or brown sugar.
  • Use corn starch, regular flour, or gluten-free all-purpose flour instead of tapioca flour for thickening the sauce.
  • Toss in your favorite vegetables! Cauliflower, bok choy, carrots, green beans, snap peas, and zucchini are all great options.
  • Use beef broth or beef stock instead of chicken broth in the sauce. 
  • Swap the steak for one pound of ground beef.

How to Make Beef and Noodles:

Add all of the ingredients for the sauce to a small blender and blend to combine.

As an alternative, you can whisk all of the ingredients together in a mixing bowl. If you do so, peel and mince the garlic and fresh ginger. Set aside until ready to use.

Slice the beef and onions. Similarly, chop the broccoli into florets, the bell pepper into matchsticks and the green onions into 2 inch pieces.

Heat a large skillet or wok over medium-high heat. Allow the skillet to heat up for a few minutes before adding the sliced steak and onions.

Use a wooden spoon or a rubber spatula to spread the beef and onions into a single layer. Cook undisturbed for 2-3 minutes.

Add the chopped broccoli and bell peppers and cook for an additional 3-5 minutes, until softened but still al dente. If at any point the vegetables are cooking too quickly, reduce to medium heat.

While stir frying the beef and vegetables, heat a large pot of water to boiling on the stove top to cook the rice noodles. Cook rice noodles for 6-8 minutes, or follow the time indication on the package instructions.

When the noodles have finished cooking, drain them into a colander.

Add the cooked noodles, green onions, and sauce to the skillet with the beef and vegetables.

Cook, stirring constantly, until much of the sauce has been absorbed. This goes quickly!

Taste the noodles for flavor and add sea salt and black pepper to your personal taste. Serve beef and noodles immediately, and enjoy! These homemade noodles taste even better the next day, so don’t let your leftovers go to waste!

Store leftovers in an airtight container in the refrigerator for up to 5 days.

Tips for the Best Beef Noodles:

  1. If you love caramelized noodles, you can cook the beef and noodles until the noodles begin to stick to the pan for little crispy bits and turn golden brown. 
  2. On the contrary, if you enjoy saucy noodles, double the sauce recipe and use as much as you see fit.
  3. Chop everything before starting the recipe so that you can toss each ingredient in when needed.
  4. Cook the rice noodles at the same time as stir frying the beef and veggies so that they can go directly from the colander into the skillet. This prevents the noodles from clumping.

  • 1 bunch green onions chopped

*Replace the coconut aminos with โ…“ cup low-sodium soy sauce, tamari, or liquid aminos + 3 tablespoons of pure maple syrup or brown sugar if youโ€™d prefer. Because coconut aminos are naturally sweet, we need to add a sweetener when replacing it with a soy based sauce.
** Use corn starch, arrowroot starch, all-purpose flour, or gluten-free all-purpose flour instead of tapioca flour if youโ€™d prefer.
*** The kind of steak doesnโ€™t matter as long as you like it! Use boneless ribeye, top sirloin steak, or filet mignon. I recommend avoiding tougher cuts of beef like flank steak for the best results.
