True story: my close friends give me a substantial amount of flack for the amount of carrots I eat daily. Itโs unruly.
I source my carbs from starchy vegetables, berries, and a small amount of brown rice. And carrots make up a dramatic portion of it. Theyโre sweet, theyโre earthy…they play nicely with other vegetables…Iโm just so into them, hook line and sinker!
Well, I recently tried my hand at carrot fries, and I must say they really do a body good.
They nail that fry craving and are just so addicting. Plus, itโs nearly impossible to overdo it on them, so you donโt get to feel guilty about it.

Do carrot fries get crispy like real fries? No.
In my experience, carrot fries get a little char and a small crisp but they do stay soft.

Ingredients for Carrot Fries:
Carrots, avocado oil, paprika, garlic powder and sea salt.
I use avocado oil for cooking and baking at high temperatures because it has a high smoke point. I donโt recommend using extra virgin olive oil, as it burns when used for sautรฉing or roasting.
The paprika, sea salt, and garlic powder give the carrot fries lovely seasoning. This simple combination of flavors gives a bit of a smoky vibe. You can easily use your favorite seasonings if you prefer something else over paprika and garlic powder. Even just sea salt is great!
How to Make Carrot Fries:
Preheat the oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.
Chop the carrots into fry shapes and place them in a large mixing bowl along with the avocado oil, paprika, garlic, and sea salt.
Use your hands to toss everything together until the carrots are well-coated with oil and seasoning.
Spread the fries on the baking sheet into a single layer, giving them plenty of room to bake evenly.
Bake for 20 to 25 minutes, or until the fries are golden-brown.

- 2 Tbsp avocado oil
- 1 Tbsp dried parsley
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp sea salt
