COWBOY CAVIAR RECIPE

Drain the can of black eyed peas and the canned black beans and corn. Rinse everything well and allow it to drip dry.

Transfer the beans, corn, chopped veggies and cilantro to a large mixing bowl.

Pour in the dressing (olive oil, vinegar, fresh garlic, and salt and pepper). Toss everything until ingredients are well coated with dressing.

taste the cowboy caviar for flavor and add anything you think it needs - lemon juice, more salt, onion, etc.
