Whisk the ingredients for the sauce together in a measuring cup or a small bowl. Set aside until ready to use.

Beat the eggs in a large mixing bowl then stir in the chopped chicken. Add in the tapioca flour.

Toss the chicken in the tapioca flour and egg mixture until well combined.

Heat a large skillet over medium-high heat and brown the chicken until golden brown.
