Add all of the chopped vegetables to a large pot with some cooking oil and cook on medium heat, stirring occasionally, for 10-15 minutes.

Remove the remaining turkey meat off of the carcass and give it a rough chop.

Add the broth and turkey meat to the pot with the vegetables. Bring pot to a full boil then reduce the heat to a gentle boil and cook for 20 minutes.
