Mix the pumpkin puree and eggs (wet ingredients) in a mixing bowl until combined.

Add in the dry ingredients with the wet ingredients and mix well.

Transfer the pumpkin mixture to a parchment-line loaf pan and spread it into an even layer. Sprinkle with the cinnamon and sugar mixture, then repeat for the remaining batter.

Use a butter knife to carve an 'S' shape into the pumpkin mixture.
