Preheat the oven to 375 degrees Fahrenheit. Place the chopped beet on a sheet of foil, then fold the foil over the beets, creating a foil packet.

Roast for 40 to 50 minutes, or until the beets are soft when poked with a fork.

Allow the beets to cool to room temperature.

Add all of the ingredients for the pesto sauce to a food processor except for the olive oil.
