Chop the sweet potato, toss in oil and salt and roast at 400 degrees F for 20 minutes.

Mix together the ingredients for the balsamic vinaigrette then set aside until ready to use.

Toast the pecans in a skillet with pure maple syrup, then give them a rough chop.

Add all of the salad ingredients to a large bowl.

Toss everything together with balsamic vinaigrette, then serve!
