You didn’t think I had it in me, did ya?
It’s true: your eyes do not deceive you. I made pasta. Of the lasagna varietal.ย There are some things spaghetti squash can’t fix, and that’s a lasagna craving.
Prior to making these lasagna roll-ups, I wasn’t sure what the biggity big deal was with them. I had seen and ignored roll-up recipes. In my head, I stewed: “why would you roll it up if you can just make a regular freaking lasagna? Roll-ups make me kinda mad. I’m gonna go make roll-ups.”
As I began handling the limp…err…wet noodles, smearing them with portabella and spinach cheesy filling, rolling them, saucing them, and sprinkling them, I was overcome with a sense of calm. Rolling up lasagna is therapeutic. Why had I never rolled lasagna before?
AND there’s more to the story. Roll-ups are really easy to serve with grace. For someone like me who can’t scoop anything out of a casserole dish without dropping 98% of it on the floor or someone’s lap, these roll-ups are a hassle-free solution. Your friends and family will thank you.

I love rolled things *exactly* because of what you said.. It’s easier to serve and then I can justify ‘just one more roll up’ which feels like a lot less than a scoop of molten cheesy lasagna ๐
