Now, let us discuss this chicken recipe!

Itโ€™s so quick and easy to prepare and requires only one skillet. I made a few changes to the ingredients just out of personal preference, but the recipe is incredibly well-made.

Hereโ€™s how we make it!

How to Make Creamy Chicken with Spinach Artichoke Sauce:

Slice the chicken in half to make a thinner cutlet. This helps ensure the chicken cooks evenly and stays tender. As an alternative, you can purchase chicken tenders or thin chicken fillets that are already thinner cuts.

In a large skillet, head the avocado oil over medium-high heat. Add the chicken and cook until golden-brown on both sides and cooked through, about 4 to 5 minutes per side. Transfer the chicken to a plate and set aside.

Add the garlic to the skillet and cook, stirring continuously, for 30 seconds. Add the stock and cook, scraping up any browned bits from the bottom of the pan with your spoon, for 1 to 2 minutes. Add the coconut milk, ยผ teaspoon of sea salt, and ยผ teaspoon of black pepper and cook until the sauce has reduced by half, about 3 to 4 minutes. Stir in the mustard.

Add the spinach and artichokes and cook until the spinach has wilted, about 2 minutes. Taste and season with salt and pepper as desired. Return the chicken to the pan and serve immediately.

If you eat rice, you can serve the chicken with steamed white or brown rice. You can also serve with your choice of gluten-free or grain-free pasta. Keep it simple with a side of roasted vegetables or a salad.

Notes

Add 1 cup of sun-dried tomatoes, 2 Tablespoons of capers, and/or 1/2 cup of pitted kalamata olives to bump up the flavor if you'd like.
