Made with chickpeas, almond butter (or nut butter of choice), and pure maple syrup, this skillet cookie is gluten-free and dairy-free.
Sure, this chocolate chip skillet cookie is still full of sugar (pure maple syrup), but relative to a classic fully-leaded skillet cookie, itโs a cleaner, more thoughtful treat for forging healthier habits.

I thought youโd never ask. I topped this situation with dairy-free ice cream and Saffron Roadโs new Salted Caramel Crunchy Chickpeas. They add a nice burst of flavor and a lovely crunch!

You have a few options when it comes to baking this beauty.
I tested the recipe using two small 5-inch cast iron skillets, and also tested it in a 9-inch cast iron skillet.
You can also use an 8โ x 8โ cake pan if you donโt have a skillet option.
How to Make Almond Butter Chocolate Chip Chickpea Skillet Cookie:
One of the best parts about this skillet cookie, other than the fact that itโs amazingly melt-in-your-mouth nutty, chocolatey, moist and delicious, is the fact that itโs prepared in a blender.
Simply add everything but the chocolate chips to your blender, blend on high until itโs nice and creamy, then add in your chocolate chips.
Bake it off, and youโre good to go! Just be sure to serve the dessert hot with ice cream and crunchy chickpeas.

Almond Butter Chocolate Chip Chickpea Skillet Cookie
Ingredients
- 1 14-ounce can garbanzo beans, drained and rinsed
- 1/3 cup unsweetened creamy almond butter
- 3 tablespoons coconut oil melted
- 2/3 cup pure maple syrup
- 2 teaspoons pure vanilla extract
- 1 teaspoon cider vinegar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon sea salt
- 3/4 teaspoon ground cinnamon
- 3/4 cup dark chocolate chips
Instructions
- Preheat the oven to 350 degrees F and lightly oil two 5-inch (or one 9-inch) cast iron skillets.ย
- Add all ingredients except the chocolate chips to a blender or food processor. Blend until completely smooth (note: you may need to stop the blender a few times to scrape the sides and continue blending).
- Divide the mixture between the two skillets. Place skillets on a baking sheet and bake 25 to 35 minutes, until the sides are golden-brown and center has reached desired level of doneness.
- Allow skillets to cool enough to handle. Serve skillet cookies with ice cream and crunchy chickpeas
My sister brought these to our girls weekend in an 9 by 13 glass pan. We had other baked goods also but these were the first ones gone. They were delicious. We all asked for the recipe. I can’t wait to make them for my family. I’m trying to think of other dessert recipes I can use beans.
