Anyone else feel like this week flew right by? Typically, I like to post three new recipes each week, but with other projects (cough cough the cookbook I’m working on, cough sneeze), I was only able to muster up one – these Gluten-Free Pumpkin Breakfast Cookies were certainly worth the limelight, though!

It’s nice and chilly here, so I’ll be spending some time in the hot yoga room, and crossing some things off my To Do list.

We have Jackfruit and Pinto Bean Taquitos, Butternut Squash Soup, Roasted Vegetable Harvest Salad, Thai Lentil Vegan Meatloaf, and Vegan Meatball Subs. All nutritious, all delicious, and geared toward making your belly feel full and satisfied.
