Ah hey!
We’re back in Colorado visiting friends and poking around Rocky Mountain National Park this weekend. Just in time for chilly fall weather to sweep through and make a little mountain vacation extra cozy.
This week, we have nothing but comfort food for you! Way I see it, we all need to build up our winter hibernation layer to keep ourselves warm, so why not do so through nourishing, nutritious winter squash-infused foods? So put on those fuzzy socks, make yourself a hot mug of tea, and get to carb-ing! This week, we have Creamy Wild Rice Mushroom Soup, Sweet Potato and Black Bean Enchiladas, Butternut Squash and Swiss Chard Enchilada Casserole, Vegan Butternut Squash Pasta, and Baked Enchilada Veggie Burritos.
Get them carbs!
