Something I have been meaning to do for a long time is give you a big ol’ gluten free recipe roundup. Surpriiiise! I got around to it! I had a blast peeling back the layers of the intergalacticweb and search in the food blog nooks and crannies for as many delicious gluten free pancake recipes as I could find. There’s actually more than 50 out there…but I think these’ll do ya for a hot minute.
I made a note after each link that tells you which type of gluten free flour is used so that if you prefer to search your recipes by flour-type (like me), you’ll save yourself some time. As a self-proclaimed pancake queen, I have to say I am in LOVVVVVVVE with this roundup! So many stacks of deliciousness! Those pancakes that I fought my four hour writer’s block with just HAPPEN to be gluten-free little buggers too! PUMPKIN FESTIVAAAAAAAAL!!! We could buy a pumpkin and make pumpkin pancakes out of it!! I wish we had a pumpkin festival! Our pumpkin patches are pretty teeny and lame around here. Are you guys the ones that catapult pumpkins hundreds of feet across fields or am I thinking of a different area? Anyway, I hope your niece gets some use out of this post…I figured it could be a good resource for people who are gf and are sick of the same ol’ breakfast. 🙂 I have it in my head that I’ll be making each and every recipe but somehow I think my waistline will get sick of pancakes before my mouth does 😉 Have a great weekend, momma!
Yep, we’re the ones that catapult the pumpkins. Libby, Libby, Libby on the label, label, label is in Morton. Seriously. There are tons of pumpkin farms around the area, only they are the small white ones that you use for canning and such-not. You go and eat pumpkin EVERYTHING there. Things you never even thought of. The line for pumpkin ice cream goes on forever. The lines and people make my husband sigh. It’s a huge deal here, though. And, yes. My waistline can’t come close to competing with my taste buds when it comes to pancakes. So, I have to only have them on occasion.
I MUST see catapulting pumpkins!!! My high school physics teacher showed us a video of you guys and your pumpkin catapults…the video has obviously stuck with me for all these years. Consider it on my bucket list! I’ll totally be the weirdo in the field who goes around scraping up mashed pumpkin to try to salvage it for pumpkin ice cream, pies, and pancakes 😉
You crack me up!! Promise that one year you will make it over here for it–the festival is always in September, but I’m thinking that they catapult the pumpkins at a different time. We’ll make a date and then come home and create our own pumpkin pancakes with a special syrup. 🙂

I have a bag of some various flours in my freezer that need to be used up, once I can get past grilling out on sunny days (they will soon be gone, and I’ll be stuck with that stupid butt snow, but stupid butt snow is perfect pancake weather.
